Miso Dressing Cucumber & Carrot Salad

Serves 2


  • 50g rocket leaves
  • 2 Carrots made into ribbons
  • Half a cucumber made into ribbons
  • Half an avocado cut in cubes
  • 2 tbsp Sunflower Seeds
  • 2 tbsp Pumpkin Seeds
  • 1 tbsp Sesame Seeds
  • Olive Oil


In a salad bowl add rocket, carrots, cucumber and avocado.

Lightly roast all the seeds in a dry frying pan over medium-low heat for 3 minutes. Drizzle over a little olive oil, toss some salt and continue to dry-fry until golden.

Sprinkle over the salad then drizzle over the miso dressing and serve.

Miso Dressing

  • 2 tbsp white miso paste
  • 125ml white balsamic vinegar
  • 3 tbsp sesame oil
  • 1 tsp grated ginger
  • 1 tbsp raw honey
  • 1 tsp tamari
  • 1 tsp sesame seeds
  • 1 tbsp water

Whisk all ingredients together and drizzle over the salad.
